Item description for Nisin and Novel Lantibiotics by G. Jung...
The lantibiotics have been recognised in the past few years as a novel family of microbial peptides containing unusual sulfide rings and dehydroamino acids. Recent application of molecular biological techniques has led to the detection of lantibiotic structural genes and previously unknown biosynthesis genes. The prospect of gaining insight into the unique peptide modification mechanisms leading to dehydration of amino acids and thioether formation has attracted considerable interest fromn scientists working in both applied and basic research. It now seems possible to construct and produce novel peptides with exciting biological properties for use in biomedical applications and food technology. In compiling this book the editors have invited contributions from leading investigators in different disciplines (chemistry, biochemistry, molecular genetics and microbiology) concerned with research on lantibiotics. The material presented comprises an introduction, reviews for those new to this rapidly growing field, as well as comprehensive presentations of current data, much of which has not been published previously.
